And so, yes, I made casseroles. They are easy and hearty to prepare, and they often incorporate ingredients that are easily stored when you live 25 miles away from the nearest store. Don't hate on the humble casserole too much.
In smaller, lighter doses, a baked dish can also be good comfort food that incorporates several different food groups into one pan, and can be reheated in small batches throughout the week. Tasty and economical.

I love to make dorito casserole. Though lately I've stopped making it with doritos (MSG is satan) and have been using tostitos or fritos instead. I never have leftovers, it is sooooo good.
