Also,a month or so ago my friends and I decided to have an apple pie baking day. We fucked up the top crust hard core, but it still came out delicious and our coworkers started making requests for them.

The crust is chewy and sweet and it's filled with all sorts of glorious Italian meats and cheeses and then topped with halved hard-boiled eggs. It is HEAVENLY! You can eat it hot or cold, for breakfast, lunch or dinner.
*wipes drool from chin and crosses fingers for a response*

1) Pecan. It has nuts. End of.
2) Blueberry. But Maine blueberries. My family lives in Maine, and I know there is no finer fruit, anywhere.
3) Apple. Pure, simple, the Platonic Horse of pies.
4) Chocolate Cream. With whipped cream. From Moody's Diner in Waldeboro, Maine. Insane. Eat it and weep.
5) Bumbleberry. Because when you just can't decide what berry to go with, bumbleberry tells you to sit back and stop worrying.

I lived on an apple farm for 2 years and ran the orchard store, including an extremely popular apple pie business. We sell all the pies frozen & uncooked so people can bake them on demand. (Just a disclaimer, we just had regular not cheese-crust pies. Keep an eye on yours around 60 minutes.)

Thanksgiving is serious business to my mother and we always had at least 3 pies available for dessert. Pecan, pumpkin and mincemeat- however she has gotten creative on #3 in recent years.
Just no apple. My dad hates apple.

I'm making it tonight if I can find a mixer somewhere in New York after work. Mine broke. ):

¼ cup melted butter
1/2cup white sugar
15 crushed graham crackers
Combine the above and press into an 81/2 X15 inch pan.
Cream the following:
8 oz. of cream cheese
¼ tsp. vanilla
½ cup white sugar
Add 2 well beaten eggs.
Pour this on the crust and bake 15 min. at 375°. Let cool.
Mix ½-3/4 cup of sugar with 2T. of cornstarch. Mix this with the frozen blueberries, I usually used a quart. Add ¼ cup of water and 1 tsp of lemon juice. Cook until thickened.
Cool slightly, then spread on baked part. Refrigerate until ready to serve.

they make the world's most AWESOME apple pie! sweet, cinnamon-y and the apple slices baked al dente in a buttery, delectable crust.
the smell of warm pie in this little store is hallucinatory. then at home: a little ice cream on the side, maybe? or whipped cream?
