Chocolate Zucchini Cake

½ cup margarine
½ cup vegetable oil
1 ¾ cups sugar
2 eggs
1 teaspoon vanilla
½ cup buttermilk
2 ½ cups flour
4 tablespoons cocoa
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
½ teaspoon cloves
2 cups grated zucchini

Beat together margarine, oil and sugar. Add eggs, vanilla and buttermilk and blend well. Mix together cocoa, flour, baking soda, baking powder, salt, cinnamon and cloves. Stir into creamed mixture until well blended. Stir in peeled and grated zucchini. Bake in greased and floured bundt pan for 60-75 minutes at 325 F or until tootpick inserted in center comes out clean. Can also be baked in 9x13 inch pan 40-45 minutes at 325. Cool in bundt pan 10 minutes. Turn out onto plate. Cool completely and frost with chocolate frosting.

If you skip the frosting, like I do, you might want to add a bit of extra sugar. If you like your cake sweet, that is.
The zucchini makes for a light but moist cake, which I love!

It's unlikely anyone will start slapping the sausage without the casing just because Moe recommends it. And anyone who does is an idiot. That said, I'm so over Moe bating her readers for the sake of attention, or page views, or self-indulgence.
