Hi there! Okay, this is kind of complicated. It was a LOT of work, and it was a HUUUUGE recipe, but I think it turned out okay.

Meat mixture:
2 lbs ground pork
2 lbs ground beef
5 cloves garlic, minced
1 small onion, minced
2 tsp dried parsley
2 eggs
1/2 c. breadcrumbs
1 tsp salt
As much black pepper as you want (I love black pepper)

Combine everything really well.

You'll also need a ketchup glaze and a bunch of mashed potatoes. I'll get to that in a second.

You'll need three round foil cake pans. (Not pie pans - they taper down too much at the bottom.) Divide the meat mixture into even thirds, then press it down as flat as you can into the pie pans.

Bake at 400° until the middle reaches 155°F (yay for probe thermometers!) Let cool for about 10 minutes or so. Then carefully take them out of the pan (I did this by carefully inverting each "cake" onto a plate,) and let them cool until they're easy enough to handle.

While they're baking, you can make the ketchup glaze and the mashed potatoes.

Potatoes:
Just make a fucking metric ton of Potato Buds. It HAS to be the fakey generic potato buds, unless you can make extremely fine and creamy "real" mashed potatoes. I can't even remember how much I made, but you said your BF loves mashed potatoes, so either way, make a lot. :)

Ketchup glaze:
1/2 cup barbecue sauce (any kind you like)
1/2 cup ketchup
1 Tbsp. hot sauce (of your choosing)

Okay, now that you have your potatoes and ketchup glaze, it's time to prepare the layers. The layers will probably have a rounded top at this point. Carefully slice off the roundy part -- it'll be a little bit like removing the very peak of a muffin top, I guess. Just make sure the surfaces of your layers are all flat. I ended up saving the stuff I sheared off, and I gave it to my BF in the form of a sandwich before dinner was ready :)

Next I put one layer down on a cookie sheet, and glazed the top of it with some of the ketchup mixture. I set the next layer on top of that, and glazed it with more ketchup mixture. You can be kinda sloppy with the ketchup mixture, since there's a LOT of it and it adds flavor, so just throw on as much as you want. Finally I set the last layer on top. You'll now have a tower of three layers.

Carefully "frost" your cake with the mashed potatoes. I slathered it on pretty thick.

I stuck it back in the oven for a few minutes to re-warm it and to let the potatoes brown a bit, like meringue peaks. Then I stuck an olive on top like a cherry and served it.

Like I said: HUUUUUGE recipe! But it was a big hit and it would probably work well for a larger group or a party. It's a bit much for two people. My BF and I ate leftovers for a week and still couldn't finish it. :)
